birthday time

we celebrated eric’s birthday the other day. we also celebrated our fourth anniversary. this time of year is really kinda crazy so it’s hard to celebrate eric’s birthday away from everybody else’s birthdays, christmas, and our anniversary dinner. (this year eric’s also getting a ‘half birthday’ with no christmas wrapping paper or decorations, and a whole day just about him! i’ll elaborate when the time comes. :D)

our day started with some tasty pastries, compliments of eric’s early-morning trip to safeway. 🙂 for lunch we celebrated our anniversary by going to the cheesecake factory (yum!) then we went to see a movie for eric’s birthday. once we were back home, eric got to enjoy his birthday cake….a vegan cheesecake! 🙂 it was really good! seriously tasty. thanks samantha for the recipe!

so far we’re enjoying our christmas weekend! we’re still hoping for snow on tuesday, too. 🙂

    yeah, being a big fan of cheesecake i was more than skeptical and couldn’t get the image of blocks of tofu out of my head, till i tried this recipe. it is seriously good. no ‘soy’ or ‘tofu’ taste and the consistency is, i’d say, 80% the same. plus a pound of dark chocolate makes everything better. 🙂
