last week i ordered some cookbooks from amazon to spice up our cheap dinner menu. everyday italian, vegan with a vengence, and vegan cupcakes take over the world. the first two cookbooks have yummy, cheap recipes…but….i am infatuated with ma vegan cupcakes! so far i’ve made some rummy cupcakes and today i made oreo cupcakes (well, organic newman-o’s). super yum!

and i totally recommend the vegan cookbooks, they’re great! i can’t wait to try the seitan!

silas subaru!
silas hails from thorton, co, where we found him snoozing at the lot of “mike shaw subaru.” we had originally drove down there to adopt a “rescue” subi, but six hours later we were driving home with silas! 😀
he’s a very sporty and nimble 2007 subaru impreza 2.5i sports wagon. we’re very excited to have him with us. sally subi and silas subaru are having some “alone time” in the garage, getting to know each other better. we’re hoping they like each other. 🙂

[and if you’re wondering, silas is eric’s new ride to work…thus sally can be mine…all miiiiine! mwahaha! no more cabin fever!]

Well… it’s been a while now, but we did want to mention the fact the Jakki from The Jakkit came out to Denver for an interview and took some time out of her busy city-hopping schedule to spend some time with us. Unfortunately, we don’t have any pictures of us with her in them, but we do have this picture (next to the ‘OT AN TRANCE’ sign,) taken with our camera that (sort of) proves she was here. (Although for all you know, that picture could have been taken anywhere.) 😉

In other news… Candice and I have a heck of a day yesterday (Saturday the 3rd) but the fruits of our labor paid off and we made a major purchase… more details (and pictures) to come soon.

well, this morning i drove marc, shannon, and a sleepy eve to DIA for their trip back to cali…thanks so much for coming guys! we had so much fun with you all here!
i’ve put some pics in the gallery, you can view them here. unfortunately i forgot to charge the camera battery for 2 months so the very day we went up to eldora, the ski resort closest to us, right past eric’s work, we were without a device to take pics with! 🙁 aaaand…it was eric’s first ever time snowboarding! hooray for eric! both of us had so much fun bopping on the bunnyhill. 😀 i haven’t been in nearly 10 years, so it’s like begining all over again. we can’t wait to go back for more, too! i’m pushing for this weekend. 😀 TOTALLY fun!
we also took a trip down to colorado springs and took the cog railway up to pike’s peak. it was really pretty, but they had to stop the train halfway to the top because of snow. eric and i then went to have a late lunch in manitou, while marc and shannon headed for the garden of the gods.

Haven’t had time to blog in a while, so I’m staying up late tonight to write a little bit about our recent adventures. As you know Shannon, Marc, and baby Eve are over here visiting us. They’ve been here since last week, but I had to work, and didn’t get to do that much stuff with them, so I took last Friday off so that we could all go some place together. And that some place was the Stanley Hotel in Estes Park, Colorado (about a 45 min. from our house.)
The hotel is most famous as being the inspiration for Stephen King’s “Overlook Hotel” in the book/movie/mini-series The Shining. The hotel itself has a very fascinating history. It was built by the brothers who are famous for building the Stanley Steamer cars. But what I didn’t know was that these were also the guys that basically invented the process/technology for rolled film for camera; they later sold their patent to Eastman-Kodak, and made about $10 million (in turn-of-the-century dollars) by the time they were done with that venture.
